How we sharpen
We use a water cooled, slow speed grinding
technique to ensure that the work piece does not get hot during the
grinding process. This is important because if the work piece is heated
and then cools the hardness (or temper) in the steel of the work piece
will be reduced. This means that the resulting cutting edge while being
sharp to start with will not last very long.
When the grinding is complete the edge is honed with a leather honing
wheel to a mirror finish. This has two functions. Firstly to remove the
bur created during grinding thus producing the scary sharp edge.
Secondly to create a mirror finish to the edge which means the
tool/knife will cut smoothly and easily.
